MALT

Great Western Malting Dextra Pils Malt – (GW-DEXT)

Dextra Pils Malt is produced using a unique process that gelatinizes the starch within the kernel, which contributes additional body and foam stability in beers, without influencing color or flavor.

Canada Malting Co. Century Rye Malt – (CM-RYEM)

Century Rye Malt lends a rich, slightly spicy flavour profile that provides a great balance for citrusy hops. Rye malt is higher in protein and beta-glucans, so rice hulls are recommended to avoid stuck mashes. Read our blog or listen to our podcast to learn more about using rye to spice up your beers!

Bairds Maris Otter Pale Ale Malt – (BD-MOPA)

Bairds Maris Otter Pale Ale Malt is grown and produced in the UK using lower protein Maris Otter winter barley. Modified to enhance foam formation and palate fullness, Maris Otter imparts sweet and flavourful biscuity characteristics, perfect for traditional British ales or UK pale ales.

BestMalz Caramel Aromatic Malt- (BZ-AROM)

BestMalz Caramel Aromatic Malt is a German 2-Row aromatic malt in the Munich malt family, but on the darker end. Contributes a rich and intense, but non-crystal malt, flavor and aroma to beer.

Briess Midnight Wheat Malt – (BM-MWHT)

Dark beer season is almost upon us. Use Midnight Wheat Malt to add subtle, smooth, slightly sweet roasted flavors to your beers, without the bitter, astringent, dry flavors or aftertaste of most black malts. Finishes exceptionally clean and is the smoothest source of black color of any malt. Excellent in Black IPAs, Schwarzbiers, other dark ales and lagers, and for color adjustment in any beer style.

YEAST & ENZYMES

Fermentis SafAle BW-20 – Belgian Wheat Yeast (FM-BW20

Specialty yeast selected for the production of wheat beers having neutral fruity flavors with specific phenolic character (clove and peppery notes). Yeast that doesn’t completely ferment maltotriose giving some mouthfeel to the beer. Yeast having a medium sedimentation forms no clumps but a powdery haze when resuspended in the beer.

Fermentis W-68 – Hefeweizen Yeast (FM-W68H)

Specialty yeast selected for the production of aromatic beers with typical phenolic character (clove and peppery notes) and rich in fruity and floral flavors. Suitable for a great variety of wheat-base beers and fruity-spicy oriented styles. Yeast with a medium sedimentation: forms no clumps but a powdery haze when re suspended in the beer.

Fermentis LD-20 – Lager Yeast (FM-LD20)

An All-In-1™ yeast & enzyme blend for lower carb* dry Lager beers.  SafBrew™ LD-20 is the perfect choice for the production of very dry and neutral lager beers with reduced residual sugars. SafBrew™ LD-20 is made of both active dry yeast and enzymes and allows the production of beers containing the same level of alcohol with a reduction of up to 20% of carbohydrates including dextrins.

Lallemand LalBrew Pomona™ – Modern Hybrid IPA Yeast- (LB-POMO)

LalBrew Pomona™ is a hybrid yeast that was selected for flavor and fermentation performance in hoppy beers. Named after the goddess of fruit trees, LalBrew Pomona™ produces a unique and juicy flavor profile with notes of peach, citrus, and tropical fruits. This strain was developed by our partner Escarpment Laboratories (Canada) using advanced yeast breeding and adaptive laboratory evolution in high ABV and highly hopped IPA fermentations. The result is a fruity, stress-tolerant, and robust strain that enhances biotransformation and haze for modern IPA styles.

AB Biotek Pinnacle Crisp Sour– (AB-PCSR)

Pinnacle Crisp Sour is a unique Lachancea thermotolerans species isolated from nature and selected for its ability to produce lactic acid and its excellent performance in beer production. Pinnacle Crisp Sour produces acids and alcohol during fermentation, without the need for a pre-fermentation acidification step (like kettle souring) or cofermentation.

White Labs Ultra Ferm – (WL-UFRM)

Ultra Ferm is a liquid amyloglucosidase that completely hydrolyzes dextrins into fermentable glucose. This enzyme can be added to the brewhouse. Add during mash-in; recommended mash times are between 1-4 hours. For shorter mash times, use higher dosing rates.
